Inspired by a life long interest in Caribbean food, i cook Jerk Chicken, Ackee and Saltfish with rice and peas at least once a week smiley

I have started to make and bottle my favourite Jerk Chicken sauce, To compliment my Jerk Chicken i make a great Jerk Dipping Sauce fantastic flavour and a sweet heat you get from the spicy Scotch Bonnet chilli.

Jerk Chicken is believed to of been around since the Maroons introduced African meat cooking techniques to Jamaica. Mixed with Jamaican ingredients and seasonings it was set to set the worlds tastebuds on fire.

The name "Jerk" came to be used either from the Spanish word "Charqui", used to describe dried meat. With use it was changed to "Jerky" then to "Jerk". Another theory is that the name derives from the practice of poking holes into the meat to fill with spices prior to cooking. Today, the word "Jerk" is used to describe the seasoning applied to jerked food.

Witches Brew Chilli Sauce. A Caribbean slant on Tabasco chilli sauce, we age the Scotch Bonnet in used in this sauce for 4 weeks in salt and vinegar strain it and add the spice after cooking. This is a very distinctive HOT sauce.  Again this is a great all rounder for the table or the kitchen.
